We at Pacific Center for Plastic Surgery in Orange County, CA. are always looking for deliciously easy healthy recipes. In a recent article published on Dr. Weil’s website, we came across a salad that is the perfect blend of quick and healthy.
The main ingredients are broccoli and avocado. Broccoli has a powerful cholesterol lowering effect with it’s high fiber content and it’s actually more powerful when lightly steamed. Avocado is rich in healthy monounsaturated fats, which have been shown to increase the absorption of fat soluble carotenoids, as well as reduce the risk of heart disease. Broccoli Salad with Avocado
1 pound broccoli
1 ripe avocado
2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 tablespoon grainy prepared mustard
Trim and wash the broccoli and cut it into bite-sized pieces. Steam or boil the broccoli in a large pot until it is just crunchy-tender and bright green, then drain it well, and cool.
Peel and pit the avocado, then cut it into small cubes. Fold the avocado into the broccoli.
Whisk the olive oil, lemon juice, and mustard together in a small bowl, until well mixed.
Toss the broccoli and avocado with the dressing.

This broccoli salad with avocado took us all of 10-12 minutes to make. Now who doesn’t love that!
